Delicious Dinner…

We had the best dinner the other night.  Giving credit to Crystal Miller and Ree Drummond, The Pioneer Woman, for the great recipes.

RoastedChicken

We had Roasted Chicken.

Mac&Cheese

Mac & Cheese

SweetPotatoCasserole

Sweet Potatoes, a little sweet for my blood.  I will definitely cut the sugar next time around.

And Acorn Squash which I didn’t get a picture of, but it was de-lish.

Everything was wonderful and turned out great.

**Here is where Randy would make the infamous “toot toot” sound insinuating I am tooting my own horn.

However, it was tastey and everything finished at about the same time.  A small miracle for me!

I boiled off the chicken and made chicken and noodles for the following night’s dinner.  Yummy on a cold, damp evening.

Have a great day and give these recipes a whirl.

Cousin’s Wedding Reception…

My cousin, Bob, got married a few months back and had a wedding reception over the weekend.  I carried my camera around the whole night, got made fun of, and only have a few pictures  to show for it:

Our neighbors (minus Wife/Mom).  She’s in the corner with us laughing at them.  My little cousin, Carter, was all photogenic and then ducked out of the photo at the last minute.  Quick little guy!

My cousins, Brandy and Clara…..aren’t they adorable!

I vowed before we went to take lots of pictures, but didn’t.  Actually I didn’t even take these last two (obviously), Randy did.  The first one is mine though!

He loves his sweater…..really he does.

Ash monopolizing the toys.  That’s Lamb Chop she’s gnawing on.

Randy had to perform surgery on Bear’s nose, but all is well now.  Thai loves his bear!

Our house looks like we have a (really hairy) toddler with all the toys strunge about.

Have a great day!

HotChocolateMix

Yum!

I think you can get this around Valentine’s Day from Harney & Sons.  I don’t see it on their site right now.  It’s a little pricey, but oh so good.

Chickens…

The time has come……for us to take our chickens to the butcher.  I loaded them up into the crates alone.  It was a really sad time.  These chickens are so healthy and happy.  However, their soul purpose was to provide us food for the months to come (12 of them to be exact).

They are now in our freezer.  We did hearts and livers also (the gizzards are going to mom and dad) so we’ll see what I can whip up with them.

We have enough chicken now to have 1 whole chicken once a week for a year.  They ended up costing about $7/chicken not including our time.  Not bad for a free-range, “naturally-raised,” happy chicken.

Have a great day!
